Christmas Fudge


I would like to wish my dear Mom a very Happy, Healthy and Blessed birthday! Yes, it's my mom's birthday today and this is for her.

These cuties are my Christmastime favourite for the give aways. I always prepare them to take to work or to pack them in cute,little packages and give as edible gifts. Trust me, I’ve got my co workers asking for more. All of men co workers I mean! Female co workers want the recipe and when I give them the recipe, they can’t believe it’s this easy! See for your self!

Ingredients:
1 1/2 lb (680 g) white chocolate chips
1 can (300 mL) Regular sweetened condensed milk
1 1/2 tsp vanilla extract
1 cup chopped mixed candied fruit
1 cup sliced almonds(optional)

How to:
 Melt white choco chips with condensed milk in the microwave for about 45 seconds, stir till all the chips are melted.
 Based on the power of the individual microwave, this might take longer.
 Remove from heat; stir in vanilla and candied fruit and nuts.
 Spread evenly onto parchment paper-lined 8 or 9" (2 L) square pan.
Chill 2 hours or until firm.
 Peel off paper and cut into squares. Store tightly covered at room temperature.
 Enjoy!

Scottish Shortbread Cookies



I can't believe I am this busy at work in this festive month of December, a month which has been full of sinfully good treats! All the female co-workers are baking and baking and baking! And the end products end up on their desks, emails going out to come and grab the goodies before they disappeared! I refrain myself from baking and bringing the treats to work as so many of them are coming in! We are almost up to our neck with all the buttery, sugary and floury stuff!

Well, one in particular has caught my attention. I've made shortbread cookies before, I've had shortbread cookies before. But nothing was like this. These shortbread cookies were divine, melt-in-your-mouth wonders! I had to get the recipe I thought. I asked my co-worker and kindly, she obliged. Now, this is such a simple recipe, I thought. I've got all the ingredients it requires right in my fridge and pantry, so gotta make it!

Yes, I made these cookies and my family fell in love with it. The buttery taste is just amazing. It is something you need to brighten up your spirit before, during or after holidays. I am seeing myself making this over every Christmas for sure!

Scottish Shortbreads
Ingredients:
1 ½ cups butter
¾ cups sugar
1 ½ cups flour
½ cup corn starch
1 tsp.vanilla essence
How to:
Preheat oven to 300.
Cream butter and sugar together for about 10 minutes.
Add flour and corn starch.
Mix well. Put into a 8 or 9 inch glass pan. (Anything other than a metal pan)
Bake for 1 hour (and 15 min – depends on oven).
Let cool slightly, cut into small squares.
Keep them in air tight container.
Enjoy!

Easy Breezy December Mousse!




Let's welcome December! The month to forget all about the diets and indulge in food! All the food that otherwise makes us feel guilty. Not this month. Let's just place our worries aside and get our midriffs bigger! It's ok to have a muffin top this month. Come New Year and make another resolution to lose whatever you gain(or just make a resolution not to gain any more in the new year!) in December. This is definitely not a Salad and Soup month! And I will prove it by my posts this month.

Ready, Set, Go for this mousse!

This is yet another easy mousse to prepare. just microwave 2 cups of white chocolate chips and 1/4 cup Carnation evaporated milk. Fold in 2 cups of Cool Whip. Mousse is done after chilling. Now it's time to add some Christmas colors to it. I've used some cranberry jam that I had on hand from our Thanksgiving and some roasted, unsalted pistachios.
